Riviera Forlino, the Newest Mediterranean Restaurant in Singapore’s Fine Dining Scene

Singapore’s fine dining scene welcomes Riviera Forlino, a restaurant that celebrates Mediterranean food and offers stunning views of the Marina Bay.

Previously an Italian restaurant, Forlino is now Riviera Forlino. With the new name comes a fresh new concept that brings the flavours of the Mediterranean coast to Singapore. The food is inspired specifically by dishes found in the coastal towns along the French Riviera.

The menu at Riviera Forlino has been conceptualised by newly-appointed Executive Chef Rémy Carmignani, Executive Pastry Chef Nicolas Vergnole and Maîtresse de Maison, Elia Bajrai. Together, this star-studded team brings years of experience to the dining table, including time at Michelin-starred restaurants.

The gold pillars, chandeliers hanging from the ceiling, and million-dollar view set the ambience for a perfect lunch meeting, romantic date or evening after-work wind down. As is customary in most fine dining settings, start your meal with bread lightly dipped in olive oil. I highly recommend the Mushroom Brioche.

Although a starter, the Wild-Caught New Zealand Langoustine steals the limelight as the dish of the day. This exquisite-looking colourful dish comprises of fresh langoustine surrounded by tomato jelly, tomato vinaigrette, and topped with young shoots.

For mains, you are spoilt for choice with fresh seafood and meat options. The menu features Handmade Tortellini with slow-cooked lamb shoulder; Artisanal Linguine tossed with Sardinian Bottarga, topped with creamy Hokkaido Sea Urchin; Grain-Fed Bresse Pigeon breast served with beetroot textures, onion blanc-manger and chicken liver; and more.

Amongst Chef Nicolas’ contributions to the menu are stunning desserts like the Riviera Vacherin, a product of Chef Remy and Chef Nicolas’ first collaboration after they were both inspired by Chef Corrado Assenza’s Ricotta Di Pecora Pistachio gelato dessert that was featured in an episode of the show, “Chef’s Table: Pastry”. Even the simple and unassuming Earl Grey Tea Sorbet is suprisingly delightful.

After your meal, head to Riviera Forlino’s dedicated lounge area where you can relax and enjoy an apéritif or digestif to complete your meal in an intimate setting. Finally, as you make your way out, take some time to admire the paintings by local artists!
